Ham and Green Bean Pot Pies

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 6 ounces cooked ham, diced

  • 2 tablespoons flour

  • 1 cup milk

  • 1 can (14.5 oz.) Libby's French Style Green Beans, drained

  • 1 teaspoon dried thyme

  • 1/4 teaspoon salt

  • 1/8 teaspoon black pepper

  • 1 egg, beaten

  • 1 (9 oz.) pie crust, thawed


1. Preheat oven to 375°F.

2. In large pot, heat oil over medium. Add garlic and ham, sauté 2 minutes. Stir in flour, cook 2 minutes, stirring often. Mix in milk, green beans, thyme, salt and pepper; cook about 6 minutes or until mixture thickens. Remove from heat.

3. Spoon ham and vegetable mixture into 4 ramekins. Brush whisked egg over lip of each ramekin.

4. On a floured surface, roll out pie dough. Using 4-inch circle cuter, cut out 4 circles. Drape dough over each ramekin, crimping and sealing to the lip. Brush the remaining egg wash over top of each piece. Make 3 slits on top of each dough piece.

5. Place ramekins on a baking sheet. Cook for 30 minutes or until crust is golden brown. Remove from oven and let cool 10 minutes before serving.
