Mmmm....acaroni and cheese! Kick-up a classic with Libby's Sweet Peas and Whole Kernel Sweet Corn and a hint of pimento cheese for a touch of spice. And if you’re seeking extra protein (#gains), then we have the perfect cottage cheese mac and cheese. Simply add a cup or so of cottage cheese when mixing ingredients before broiling.

Ingredients

  • 2 boxes (7 oz.) macaroni and cheese dinner

  • 1/2 cup milk

  • 1 stick (8 tablespoons) butter

  • 1 can (15 oz.) Libby's Sweet Peas, drained

  • 1 can (15.25 oz.) Libby's Whole Kernel Sweet Corn, drained

  • 1 jar (4 oz.) diced pimentos, drained

  • 2 tablespoons olive oil

  • 1 cup panko breadcrumbs

  • Optional addition: 1 cup cottage cheese, mix-in before broiling​

Instructions

1. Prepare macaroni and cheese with milk and butter, following package directions. Gently stir in peas, corn and pimentos. Place in a 3-quart casserole dish.

2. Mix oil with breadcrumbs and sprinkle evenly over casserole. Place under broiler about 2 minutes or until top is lightly browned.
