Lime and Cumin Chicken Tenders with Fiesta Rice
3 tablespoons lime juice
2 tablespoons olive oil
1 clove garlic, minced
1/2 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
3 chicken breast tenders (boneless, skinless)
1 vegetable cup (4 oz.) Libby's Mixed Vegetables, drained

1. For marinade, mix together lime juice, oil, garlic, cumin, salt and pepper in small bowl. Add chicken and toss gently to coat. Cover and refrigerate for 15 minutes.
2. Heat large skillet over medium-high. Lift chicken tenders from the marinade and place in skillet (discard marinade.) Cook about 4 minutes per side, until internal temperature is 165°F.
3. Serve with side of Libby’s Mixed Vegetables and rice.
