1 tablespoon sesame oil
2 eggs, beaten
2 cloves garlic, minced
2 cups cooked brown rice
4 stalks scallions/green onion, chopped
2 tablespoons soy sauce
1 can (15 oz.) Libby's Mixed Vegetables, drained
Heat oil in wok or large skillet over medium-high. Add eggs; cook 30 seconds, stirring constantly and breaking up into little pieces. Add garlic; cook 30 seconds, stirring constantly. Mix in rice and scallions; cook 1 minute, stirring constantly. Mix in soy sauce and vegetables. Cook 2 minutes, or until veggies are heated through; stirring often. Serve warm.
