Pea and Green Bean Rice Medley

Ingredients

  • 1/4 cup olive oil

  • 2 tablespoons lemon juice

  • 1 teaspoon thyme

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2 cups cooked white or brown rice

  • 1 can (15 oz.) Libby's Naturals Sweet Peas, drained

  • 1 can (14.5 oz.) Libby's Naturals Cut Green Beans, drained

  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

In mixing bowl, whisk together oil, lemon juice, thyme, salt and pepper. Stir in rice, peas and green beans until well coated. Serve garnished with parsley, if desired.
