Bean & Corn Salad with Apple Cider Vinaigrette

Ingredients

  • 1/4 cup apple cider vinegar

  • 1/4 cup olive oil

  • 2 teaspoons Italian seasoning

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 can (15 oz.) Libby's Lima Beans, drained

  • 1 can (15 oz.) red kidney beans, drained

  • 1 can (15.25 oz.) Libby's Whole Kernel Sweet Corn, drained

  • 1 can (15 oz.) Libby's Sweet Peas, drained

  • 1/4 cup diced red onion

Instructions

1. In mixing bowl, whisk together vinegar, oil, Italian seasoning, salt and pepper to form dressing.

2. Add both beans, corn, peas, and onion. Mix until well coated. Serve room temperature or chilled.
