Sweet and Smoky Peas
1 can (15 oz.) Libby's Sweet Peas, drained
1 can (15 oz.) garbanzo beans, drained
1 tablespoon olive oil
1 tablespoon brown sugar
1 tablespoon smoked paprika
1 teaspoon cinnamon
1/4 teaspoon salt
1. Preheat oven 400°F.
2. Place paper towels on baking sheet. Spread peas and garbanzo beans over towels and blot with another towel on top to dry as much as possible. Remove towels so the peas and beans are directly on baking sheet. Drizzle with olive oil.
3. In small bowl, mix together sugar, paprika, cinnamon and salt. Sprinkle over peas and beans. Gently mix oil and spices onto peas and beans and spread out in single layer.
4. Roast 35-40 minutes, gently tossing halfway through. Peas and beans should be crispy when done. Remove from oven, and cool slightly before serving.
