1 pound ground turkey
1 can (15.25 oz.) Libby's Whole Kernel Sweet Corn, drained
1 can (15 oz.) black beans, drained
1 red bell peppper, seeded and diced
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1 head iceberg lettuce
sour cream (for topping)
shredded taco/Mexican cheese (for topping)
1. In large skillet over medium, cook turkey until no longer pink. Add corn, beans, peppers, cumin, oregano, garlic powder, onion powder, cayenne and salt. Cook until red bell pepper is soft, about 5 minutes.
2. Carefully tear lettuce into cups. Spoon turkey and veggie mixture into lettuce cup, top with sour cream and cheese.
