Vegetable Casserole with Crispy Cracker Topping

  • 1 can (29 oz.) Libby's Jumbo-Can Whole Kernel Sweet Corn, drained

  • 1 can (28 oz.) Libby's Jumbo-Can Italian Cut Green Beans, drained

  • 1 can (15 oz.) Libby's Peas & Carrots, drained

  • 2 cans (10.5 oz.) condensed cream of celery or mushroom soup

  • 4 tablespoons butter

  • 1 cup crushed crackers


1. Preheat oven to 375°F.

2. In large mixing bowl, combine corn, green beans, peas & carrots, and condensed soup. Transfer to 3-quart baking dish.

3. In small bowl, melt butter in microwave. Stir in crackers until well coated. Spread cracker topping evening onto vegetables.

4. Bake 30 minutes, or until bubbly and top is golden brown. Let cool 10 minutes before serving.
