Wild Rice Pilaf

  • 2 tablespoons butter

  • 1 cup chopped celery

  • 1 cup chopped onion

  • 2 boxes (6 oz.) Long Grain & Wild Rice Mix

  • 1 can (15.25 oz.) Libby's Whole Kernel Sweet Corn, drained

  • 1 can (15 oz.) Libby's Peas & Carrots, drained

  • 1/2 cup toasted sliced almonds


1. In large saucepan, melt butter over medium. Add celery and onion; cook 5 minutes. Add rice, seasoning packet and amount of water specified on the box (omit butter). Bring to boil; reduce heat, cover and simmer 30 minutes or until liquid is absorbed and rice is tender.

2. Add corn and peas & carrots; stir gently until heated through. Transfer to serving bowl; sprinkle with almonds.
