4 cups vegetable broth
1 cup orzo pasta
2 tablespoons parsley
1/8 teaspoon red pepper flakes
1 can (15 oz.) white beans, drained
1 can (14.5 oz.) Libby's Cut Green Beans, drained
1 can (14.5 oz.) diced tomatoes
1 can (15 oz.) Libby's Mixed Vegetables, drained
1 cup (8 oz.) diced cooked ham
2 tablespoons olive oil
1/4 cup grated parmesan cheese
1. In large pot, bring broth to a boil. Add orzo, parsley and pepper flakes; reduce heat and simmer 8 minutes.
2. Stir in white beans, green beans, tomatoes, mixed vegetables, and ham; heat through.
3. Ladle soup in bowls. Drizzle each with olive oil and sprinkle with parmesan cheese.
