Ingredients

  • 1 tablespoon olive oil

  • 1 cup white rice

  • 1 teaspoon garlic powder

  • 1/2 teaspoon cumin

  • 1/2 teaspoon black pepper

  • 1 cup vegetable broth

  • 1 can (8 oz.) tomato sauce

  • 1 can (15 oz.) Libby's Peas & Carrots, drained

  • 1 tablespoon olive oil

  • 1 cup white rice

  • 1 teaspoon garlic powder

  • 1/2 teaspoon cumin

  • 1/2 teaspoon black pepper

  • 1 cup vegetable broth

  • 1 can (8 oz.) tomato sauce

  • 1 can (15 oz.) Libby's Peas & Carrots, drained

Instructions

  1. In a skillet, heat oil over medium-high. Add rice, garlic, cumin and black pepper; stir together. Let sit and cook 2 minutes, stir, cook 2 minutes more.
  2. Pour in broth and stir. Cover and cook 15 minutes.
  3. Stir in tomato sauce.
  4. Remove from heat. Gently fold in peas and carrots. Let sit 2 minutes to heat through.
