Instructions
- In a skillet, heat oil over medium-high. Add rice, garlic, cumin and black pepper; stir together. Let sit and cook 2 minutes, stir, cook 2 minutes more.
- Pour in broth and stir. Cover and cook 15 minutes.
- Stir in tomato sauce.
- Remove from heat. Gently fold in peas and carrots. Let sit 2 minutes to heat through.
