Ingredients

  • 4 large eggs

  • 3 cans (15.25 oz. each) Libby's Whole Kernel Sweet Corn, drained

  • 1 sleeve round butter crackers, crushed (i.e Ritz)

  • 1 teaspoon black pepper

  • 2 cups shredded cheddar cheese, divided

  • 4 large eggs

  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat oven 350°F. Coat a backing dish with non-stick spray. Set aside.
  2. In large mixing bowl, add eggs and beat. Add corn, crushed crackers, black pepper, and 1 cup cheddar cheese and mix together.
  3. Transfer mixture to prepared baking dish. Top with remaining 1 cup cheese. Bake 30 minutes.
