Pastry Wrapped Roasted Beets and Brie

Ingredients

  • 2 sheets puff pastry dough, thawed

  • 1 wheel (8 oz.) brie cheese

  • 2 cans (15 oz.) Libby's Sliced Beets, drained

  • 1 teaspoon dried rosemary

  • 4 tablespoons butter, melted

  • crackers or bread slices (for serving)

Instructions

  1.  Preheat oven to 400°F. Coat a baking sheet with non-stick cooking spray.
  2. On baking sheet, layer puff pastry sheets on top of each other (one laid up and down, the other laid left to right). Press with hands or roll out until approximately 12-inches round.
  3. Place brie in center. Line beets around brie forming a ring. Sprinkle rosemary over beets.
  4. Fold edges of dough up all around, forming a “crust.”
  5. Brush edge entirely with melted butter.
  6. Bake 20 minutes, until dough is golden. Remove from oven and let cool 10 minutes. Serve with crackers.
