Ingredients
4 ounces cream cheese, softened
1 can (11 oz.) Libby's Vacuum-Packed Whole Kernel Sweet Corn
1/4 cup diced red bell pepper
1 cup shredded pepper jack cheese
4 boneless, skinless chicken breasts
1/2 teaspoon salt
1/4 teaspoon black pepper
prepared rice for serving

Instructions
1. Preheat oven 350°F. Coat a baking sheet with non-stick cooking spray. Set aside.
2. In small bowl, mix cream cheese, corn, red pepper, and pepper jack cheese together.
3. Slice the side of each chicken breast to make a pocket. Stuff each one with mixture and place on prepared baking sheet. Season tops with salt and pepper.
4. Bake 20-25 minutes until chicken reaches internal temperature of 165°F.
