Ingredients

  • 4 large eggs

  • 2 tablespoons chopped fresh basil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 3 small zucchini, thinly sliced

  • 1 can (15.25 oz.) Libby's Whole Kernel Sweet Corn, drained

  • 1 sweet yellow onion, diced

  • 1 cup shredded Monterey Jack cheese, divided

  • 1 cup shredded mozzarella cheese, divided

  • 4 large eggs

  • 2 tablespoons chopped fresh basil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 3 small zucchini, thinly sliced

  • 1 can (15.25 oz.) Libby's Whole Kernel Sweet Corn, drained

  • 1 cup shredded Monterey Jack cheese, divided

  • 1 cup shredded mozzarella cheese, divided

Instructions

  1. Preheat oven to 375°F. Coat a baking dish with non-stick cooking spray. Set aside.
  2. In a mixing bowl, add eggs, basil, salt and pepper. Whisk together.
  3. Add zucchini, corn, onion and 3/4 cup of each cheese. Stir together until combined.
  4. Carefully add mixture to prepared dish, spreading evenly and fixing zucchini so they lay flat.
  5. Top with remaining cheese.
  6. Bake 25-30 minutes, until cheese is melted and browned.
