1 cup mayonnaise
2 tablespoons apple cider vinegar

3 cans (15 oz.) Libby's Sweet Peas, drained
1 small red onion, thinly sliced
1 pound bacon, cooked and crumbled
8 ounces Monterey jack cheese, cubed
