1 cup mayonnaise
2 tablespoons apple cider vinegar
1/2 teaspoon black pepper
3 cans (15 oz.) Libby's Sweet Peas, drained
1 small red onion, thinly sliced
1 pound bacon, cooked and crumbled
8 ounces Monterey jack cheese, cubed
1. In large mixing bowl, whisk together mayonnaise, vinegar and black pepper to form dressing.
2. Add peas, onion, bacon, and cheese. Stir to coat. Chill 20 minutes before serving.
