Carrot and Green Bean Salad
1/4 cup olive oil
3 tablespoons lemon juice
1 clove garlic, minced
1/4 cup chopped fresh parsley
1/4 teaspoon salt
1/8 teaspoon black pepper
1 can (14.5 oz.) Libby's Cut Green Beans, drained
1 can (14.5 oz.) Libby's Sliced Carrots, drained
1 small red onion, thinly sliced
1. In medium bowl, whisk together oil, lemon juice, garlic, parsley, salt and pepper.
2. Add green beans, carrots, and onions. Mix together until well coated.
