  • 4 tablespoons butter (divided)

  • 1 small onion, chopped

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon smoked paprika

  • 2 tablespoons all-purpose flour

  • 2 cups whole milk

  • 1 package (8 oz.) shredded Mexican cheese blend

  • 1 can (15 oz.) Libby’s Mixed Vegetables, drained

  • 2 cans (5 oz.) tuna in water, drained

  • 1 package (12 oz.) refridgerated tortellini

  • 2 snack-size bags (1.5 oz.) sour cream and onion potato chips, crushed

  1. Preheat oven 375°F.
  2. In a saucepan, melt 2 tablespoons butter over medium. Add onion, pepper, and paprika. Stir and cook 3 minutes.
  3. Sprinkle flour over cooked onions. Slowly pour in milk and stir. Cook 7 minutes, stirring occasionally, until slightly thickened.
  4. Mix in cheese, vegetables and tuna. Remove from heat.
  5. Coat a baking dish with non-stick spray. Add tortellini. Pour cream sauce and vegetable mixture over pasta.
  6. In microwave-safe bowl, melt remaining 2 tablespoons butter. Mix in crushed chips. Add evenly on top of casserole.
  7. Bake 20 minutes, until bubbly and top has browned.
