  • 2 tablespoons unsalted butter

  • 1 package (8 oz.) cream cheese, softened

  • 1/4 cup milk

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon black pepper

  • 2 cans (15.25 oz.) Libby's Whole Kernel Sweet Corn, drained

  • 1 cup shredded sharp cheddar cheese

  • 1 cup shredded Monterey Jack Cheese, divided

  • 8 ounces thick-cut ham or ham steak, diced

  1. Preheat oven to 350°F. Prepare a 2-quart baking dish with non-stick cooking spray. Set aside.
  2. In a large skillet, add ham and oil. Cook on high for 5 minutes, stirring occasionally, until sides are browned. Remove with a slotted spoon to a bowl. Set aside.
  3. Reduce heat to medium. Melt butter and cream cheese in skillet. Add milk and stir constantly until smooth.
  4. Stir in garlic, paprika, and pepper.
  5. Fold in corn, cheddar cheese, 3/4 cup Monterey Jack cheese, and cooked ham until everything is well coated and cheese starts to melt.
  6. Transfer mix to prepared baking dish. Top evenly with remaining 1/4 cup cheese.
  7. Bake for 15 minutes until hot and bubbly around edges. Turn broiler on high for 2 minutes until light golden brown on top.
