1 can (15.25 oz.) Libby's Whole Kernel Sweet Corn, drained
1 can (14.5 oz.) Libby’s Sliced Carrots, drained
1/3 cup chopped roasted peppers
1/2 cup sliced green olives
2 tablespoons chopped fresh parsley
1/4 cup lemon juice
3 tablespoons extra virgin olive oil
1 teaspoon ground black pepper
1/2 teaspoon salt

Instructions
- In large bowl, mix together corn, carrots, roasted peppers, olives and parsley.
- In small bowl, whisk together lemon juice, olive oil, pepper and salt. Pour over salad and mix well.
- Cover and refrigerate 30 minutes for flavors to combine. Serve cold.
