2 salmon filets
1 can (15 oz.) Libby's Naturals Sweet Peas, drained
1/4 cup olive oil
1/4 cup lemon juice
1 tablespoon basil
1/2 tablespoon parsley
1/4 cup pine nuts
2 tablespoons grated pecorino cheese
2 cloves garlic
1/4 teaspoon Kosher salt
1. Drizzle oil and salt on salmon and bake at 400°F for approximately 15 minutes (cook time depends of size of filet).
2. While salmon is in the oven, add peas, olive oil, lemon juice, basil, parsley, pine nuts, cheese, garlic, and salt to blender. Blend until smooth. Layer across salmon filet when serving.
