  • 1 can (15 oz.) Libby's Sweet Peas, drained

  • 1 avocado, halved & pitted

  • 2 tablespoons lemon juice

  • 1/4 teaspoon salt

  • 1/8 teaspoon black pepper

  • 5 fresh basil leaves

  • 2 teaspoons olive oil

  • 1 tablespoon pepitas (pumpkin seeds)

Instructions

  1. Place peas, avocado and lemon juice in food processor; pulse 5 times or until chopped. Add salt, pepper, basil and oil; pulse about 5 more times until mixed. (For best texture, do not puree.)
