This light and flavorful Soba Noodle and Green Bean chilled salad is the ideal dish for a quick lunch or side. Homemade sauce from sesame oil, rice vinegar, soy sauce, garlic and ginger coats these nutritious noodles while Libby's Cut Green Beans add nutritious and an earthy balance.

Ingredients

  • 1 package (8 oz.) buckwheat soba noodles

  • 1/2 cup sesame oil

  • 2 tablespoons rice vinegar

  • 1 tablespoon soy sauce

  • 1 clove garlic, minced

  • 1 piece (1/2 inch) ginger, peeled and minced

  • 1 can (14.5 oz.) Libby's Cut Green Beans, drained

  • 1 tablespoon sesame seeds (divided)

  • Optional addition: try adding a dash of gochujang sauce for a little spice!

  • 1 package (8 oz.) buckwheat soba noodles

Instructions

  1. In a stove top pot, boil water and cook noodles according to package directions. Drain and rinse with cold water. Set aside to cool completely.
  2. In mixing bowl, whisk together sesame oil, rice vinegar, soy sauce, garlic and ginger.
  3. Add cooled noodles and green beans. Toss gently to coat.
  4. Sprinkle sesame seeds over salad when serving.
