4 ounces cream cheese, softened
1 can (11 oz.) Libby's Vacuum-Packed Whole Kernel Sweet Corn
1 cup shredded pepper jack cheese
4 boneless, skinless chicken breasts
seasoning for chicken
1. Preheat oven 400°F.
2. In small bowl, mix cream cheese, corn and pepperjack cheese together.
3. Make pocket slice in the side of each chicken breast. Stuff each one with mixture. Season tops with salt and pepper, chicken seasoning or taco seasoning.
4. Bake 20-25 minutes until chicken reaches internal temperature of 165°F.
