
Thai Chili Lettuce Cups
So fresh and loaded with flavor for summer! Mix tuna and drained peas with diced red and yellow bell peppers, diced onion, grated carrots and sweet Thai chili sauce. Place on butter lettuce leaves with more sauce for drizzling.

Ingredients
2 cans (5 oz. each) albacore tuna in water, drained
1 can (15 oz.) Libby's Sweet Peas, drained
1 cup small red bell pepper, seeded and diced
1 cup small yellow bell pepper, seeded and diced
1 cup small onion, diced
2 carrots, grated
1 jar sweet Thai chili sauce (divided)
butter lettuce leaves, washed and dried

Instructions
- In mixing bowl, add tuna and break apart. Add peas, both peppers, onion, carrot, and 1/2 cup sauce. Stir together until well mixed.
- Place lettuce leaves on serving tray. Spoon tuna mixture evenly on leaves. Serve with extra sauce in a bowl on the side.
