Sizzlin' Summer Succotash

​Succotash is an all-American crowd pleaser – and we’ve got two ways you can make this quick and easy dish the star of your next summer BBQ. Whether you lean towards the classic side, or a vegetarian dip is more your style – we’ve got you covered!

Cook time: 15 minutes​

Ingredients:​

  • 4 – 5 bacon slices​
  • 1 cup sweet onion
  • ​1 cup okra, cut into thin slices​
  • 1 tsp. garlic powder​
  • 1 15.25 oz. can Libby’s Whole Kernel Sweet Corn, drained​
  • 1 tsp. salt​
  • 1/4 tsp. black pepper​
  • 1 14.5 oz. can Libby’s Cut Green Beans, drained​
  • 3 tbsp. butter​
  • 1 cup, halved cherry tomatoes​
  • 1/4 cup thinly sliced fresh basil​

Instructions:​

  1. Place bacon slices in skillet, over medium heat. Cook until crisp, about 8 minutes. Transfer bacon to a paper towel, crumble and set aside. ​
  2. In the same pan, add chopped onion, fresh okra, and garlic powder over medium heat, and cook, stirring often, until the onion is just tender, about 6 minutes. ​
  3. Add Libby’s Whole Kernel Sweet Corn, salt, pepper, and Libby’s Cut Green Beans to the pan. Cook for 10 minutes, stirring often. ​
  4. Add butter, and cook until melted, about 1 minute. Remove from heat. ​
  5. Stir in halved cherry tomatoes and chopped basil; sprinkle with crumbled bacon and serve immediately.
