Air Fryer Corn Fritters

Ingredients

Fritter Ingredients:

  • 1/4 cup all-purpose flour 1/4 cup breadcrumbs
  • 1/4 cup shredded cheese of your choice (sharp cheddar, parmesan, mozzarella, etc.)
  • 1 tablespoon seasonings of your choice (garlic powder, everything bagel, paprika, or a mixture etc.)
  • 1 tablespoon fresh chopped chives or 1 teaspoon dried chives 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 – 15.25 ounce can Libby’s Whole Kernel Sweet Corn, drained and patted dry with paper towel (about 1 1/2 cups)
  • 1 large egg, beaten Cooking spray

 

Maple Aioli Ingredients:

  • 1/4 cup plain Greek yogurt 1/4 cup light mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon pure maple syrup
  • 1 teaspoon garlic, minced (about 1 clove) 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. In a mixing bowl, stir together flour, breadcrumbs, cheese, seasonings, chives, baking powder, salt, and pepper.
  2. Then, add corn and egg and mix together with a fork until a thicker batter forms.
  3. Using your hands, shape the batter into 8 thin fritters that are about 3 inches wide.*
  4. Preheat your air fryer to 370°F (185°C) for about 2 minutes. Then, lightly spray the air fryer basket with cooking spray or use parchment liners to prevent sticking.
  5. Add fritters to the air fryer and spray the tops of the fritters with a bit of cooking spray.
  6. Cook for 8 minutes, flipping the fritters halfway through. You may need to work in batches depending on the size of your air fryer.
  7. After cooking, let cool in the basket for 2 minutes before serving.
  8. In a small bowl, mix all aioli ingredients together to serve with the fritters for dipping.
