Chickpea Salad Pita Bites

The perfect, easy recipe for a nutritious and filling lunch. Enjoy with fresh baby carrots, cheese cubes, cherry tomatoes, trail mix or any side you'd like!




  • 1 can (15 oz.) Chickpeas Garbanzo Beans (also known as garbanzo beans)

  • 1 Libby’s Whole Kernel Sweet Corn Vegetable Cup (drained)

  • 1/2 green apple (diced)

  • 1/2 cucumber (peeled and diced)

  • 1/4 cup mayonnaise or vegan mayonnaise

  • salt & pepper to taste

  • pita or naan bread (quartered)


In medium mixing bowl, add chickpeas, corn, apple, cucumber, and mayonnaise. Mix to combine. Add salt and pepper to taste. Enjoy with pita or naan bread.
