1 can (15.25 oz.) Libby's Naturals Whole Kernel Sweet Corn, drained
1 can (15 oz.) Libby's Naturals Sweet Peas, drained
1/4 cup minced onion
1/4 cup flour
1/4 cup grated parmesan cheese
1 egg, beaten
1/4 teaspoon salt
1/4 teaspoon black pepper
4 ounces plain Greek yogurt
2 tablespoons lime juice
1 jalapeno pepper, seeded
1 tablespoon chopped fresh cilantro
1. Combine corn, peas, onion, flour, cheese, egg, salt and pepper in large bowl.
2. Lightly coat sauté pan with non-stick spray and heat over medium. Spoon ¼ cup of mixture on pan in 3 spots (or as many that will fit), press to flatten slightly. Cook fritters 2-3 minutes on each side or until golden brown. Repeat with remaining mixture.
3. For the dipping sauce, combined yogurt, avocado, lime juice, jalapeno and cilantro in food processor and process until smooth.
