8 ounces shell pasta (or other small pasta)
8 slices bacon, diced
1/3 cup mayonnaise
1/3 cup sour cream
2 tablespoons white wine vinegar
1 teaspoon honey
1/2 teaspoon Kosher salt
1/2 teaspoon black pepper
1 can (15.25 oz.) Libby's Naturals Whole Kernel Sweet Corn, drained
1 can (15 oz.) Libby's Naturals Sweet Peas, drained
1/2 cup diced red bell pepper
1/2 cup diced red onion
2 tablespoons chopped fresh cilantro
1. Bring large pot of salted water to boil. Stir in pasta and cook according to directions until al dente; drain.
2. In a skillet over medium-high heat, add bacon and cook until brown and crispy. Drain on paper towel-lined plate.
3. In large mixing bowl, whisk together mayonnaise, sour cream, vinegar, honey, salt and pepper.
4. Add cooked pasta, bacon, corn, peas, bell pepper, onion and cilantro. Mix together until well coated. Cover and refrigerate until ready to serve. Stir again just before serving.
