  • 1 red bell pepper, seeded and sliced

  • 1/3 cup heavy cream

  • 2 tablespoons grated Parmesan cheese

  • 1 can (14.5 oz.) Libby’s No Salt Added French Style Green Beans, drained

  • 1/2 cup Italian-style panko bread crumbs

  • 2 cloves garlic, minced

  • 2 tablespoons butter, melted

  • 1 tablespoon extra-virgin olive oil

  1. Preheat oven to 375°F. Coat a 2-quart casserole dish with non-stick spray. Set aside.
  2. Heat oil in a large skillet over medium-high. Add sausage and break up until crumbled. Cook until browned, about 8–10 minutes.
  3. Add the pepper and onion. Cook 5 minutes, stirring occasionally.
  4. Add tomatoes (undrained), cream, Parmesan, and green beans. Stir together until combined. Transfer to prepared pan.
  5. In a small bowl, stir together bread crumbs, garlic, and melted butter. Sprinkle evenly over top of the casserole.
  6. Bake 20–25 minutes until bubbly and the topping is golden brown.
