Easy Three Bean Salad

Ingredients

  • 1/4 cup olive oil

  • 1/3 cup red wine vinegar

  • 2 tablespoons chopped fresh parsley

  • 1 teaspoon garlic powder

  • 1/2 teaspoon salt

  • 1 can (14.5 oz.) Libby's Cut Green Beans, drained

  • 1 can (15 oz.) black beans, drained

  • 1 can (15 oz.) kidney beans, drained

  • 1 can (14.5 oz.) diced tomatoes, drained

  • 1/2 cup chopped cucumber

  • 1/4 cup chopped scallions/green onion

Instructions

1. In large bowl, whisk together oil, vinegar, parsley, garlic powder and salt.

2. Add all beans, tomato, cucumber, and scallions/green onion to bowl. Mix well. Cover and refrigerate until ready to serve.

3. Serve with chips, bread, or over lettuce.
