Sweet Pea Egg Salad

Give the classic egg salad a twist! This delicious dish highlights the sweet flavor of our peas, with eggs and a creamy base with Japanese flavor. Perfect served up with sandwiches at a picnic or at your next block party alongside hot dogs and hamburgers.

Ingredients

  • 1/3 cup Japanese mayonnaise (add more if you want it extra creamy!)

  • 1 teaspoon Japanese curry powder

  • 1 pinch of red pepper flakes

  • 1 green onion/scallion (sliced)

  • 6 hard-boiled eggs (peeled and chopped)

  • 1 can Libby's Sweet Peas (drained)

  • salt and pepper to taste

Instructions

  1.  In large mixing bowl, add mayonnaise, curry, pepper flakes, and green onion/scallions. Mix will. Stir in eggs and peas until well combined.Season with salt and pepper to taste.
  2.  Garnish with red pepper flakes and more green onion on top, if desired.
