Green Bean Almondine with Tomatoes

Ingredients

  • 2 tablespoons butter

  • 2 shallots, diced

  • 1 can (14.5 oz.) Libby's Naturals Cut Green Beans, drained

  • 2 tomatoes, chopped

  • 1 tablespoon chopped fresh parsley

  • 2 teaspoons lemon juice

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 cup sliced almonds

Instructions

Melt butter in pan over medium. Add shallots, sauté 3 minutes. Add green beans, tomatoes, parsley, lemon juice, salt and pepper. Mix well and cook until heated through, approximately 2 minutes. Top with almonds for serving.
