Green Bean Frittata

Ingredients

  • 1 teaspoon olive oil

  • 1 small yellow onion (diced)

  • 1 clove garlic (minced)

  • 12 eggs

  • 1 cup cottage cheese

  • 1/3 cup grated parmesan cheese

  • 1/3 cup heavy cream

  • 1 can Libby's Cut Green Beans (drained and rinsed)

  • Salt and pepper (to taste)

Instructions

  1. Preheat the oven to 350°F.  

  2. Prepare a pie dish or round cake pan by spraying with cooking spray or lightly rubbing oil all over the bottom and sides.  

  3. Heat the olive oil in a small pan over medium heat. Sauté onions for 3-5 minutes or until translucent. Add the garlic and sauté for another 30 seconds. Remove from heat and set aside.  

  4. In a large mixing bowl, whisk eggs, cottage cheese, heavy cream, and parmesan cheese until well blended. Add the sauteed onions, garlic, and green beans, along with salt and pepper to taste, and gently whisk until well combined. Pour into the prepared pan.  

  5. Bake for 45-60 minutes, or until set in the middle.
