Mediterranean Corn Salad
Recipe by Unicorns in the Kitchen Mediterranean corn salad is easy, delicious and bright. Drizzled with a zesty dressing, this is the perfect summer salad!
1 can (15.25 oz.) Libby's Whole Kernel Sweet Corn, drained
1 can (14.5 oz.) Libby’s Sliced Carrots, drained
1/3 cup chopped roasted peppers
1/2 cup sliced green olives
2 tablespoons chopped fresh parsley
1/4 cup lemon juice
3 tablespoons extra virgin olive oil
1 teaspoon Aleppo pepper
1/2 teaspoon salt
1. In large bowl, mix together corn, carrots, roasted peppers, olives and parsley.
2. In small bowl, whisk together lemon juice, olive oil, Aleppo pepper and salt. Pour over salad and mix well.
3. Cover and refrigerate 30 minutes for flavors to combine. Serve cold.
