1 1/2 pound ground beef
2/3 cups Italian-seasoned bread crumbs
1 medium red onion, diced
3 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1 can (15 oz.) Libby's Peas & Carrots, drained
1 can (14.5 oz.) diced tomatoes with onions and herbs
1. Preheat oven 350°F.
2. In large mixing bowl, combine together ground beef, bread crumbs, onion, garlic, salt, pepper and eggs. Add peas and carrots; mix well. Place mixture in 9×13–inch baking dish and shape into loaf.
3. Bake 30 minutes. Spoon tomatoes over top of meatloaf and bake an additional 20 minutes. Let stand for at least 5 minutes before serving.
