Mediterranean Salad Pita Wraps

Recipe by Taste Great Foodie  A delicious take on pita wraps using a fresh chopped salad with a refreshing dressing!

Ingredients

  • 1/2 cup olive oil

  • 1/4 cup lemon juice

  • 1 tablespoon red wine vinegar

  • 1/2 cup sour cream or greek yogurt

  • 1/2 teaspoon garlic powder

  • 1 teaspoon dried mint

  • salt and pepper to taste

  • 1 can (15.25 oz.) Libby's® Whole Kernel Sweet Corn, drained

  • 1 can (15 oz.) Libby's® Peas & Carrots, drained

  • 1 can (15 oz.) chickpeas/garbanzo beans, drained

  • 1 cucumber, chopped

  • 1/3 cup crumbled feta cheese

  • 1/4 cup minced red onion

  • 4 leaves Romaine lettuce, chopped

  • 2 medium tomatoes, sliced

  • 8 round pitas or gyro bread

Instructions

1. In small mixing bowl, whisk together olive oil, lemon juice, red wine vinegar, sour cream/greek yogurt, garlic powder, and mint. Add salt and pepper to taste.

2. Combine all other ingredients (except for the pita/gyro bread) in large mixing bowl. Add dressing and mix well.

3. Scoop salad into pitas/gyro bread and roll into a wrap.
