Oven Roasted Carrots with Honey Garlic Butter

  • 4 cans 14.5 oz cans of Libby’s Sliced Carrots-drained

  • 4 tablespoons honey

  • 1/3 cup sweet cream butter

  • 1/2 teaspoon salt

  • 1/2 teaspoon cracked black pepper

  • 4 cloves garlic (You can adjust this to your family’s tastes!)

  • Optional: 3 tablespoons fresh chopped parsley for garnish.


Preheat oven to 425°F

Melt butter in cast iron skillet over medium heat. Add the minced garlic and cook while stirring for about 30 seconds. While stirring add in honey and Libby’s Sliced Carrots. Add salt and pepper.

Gently toss Libby’s Sliced Carrots in sauce until coated.

Roast for 25 minutes.

Transfer for serving dish, add parsley for garnish. Enjoy!
