Pork, Sauerkraut and Potato Skillet Meal
2 teaspoons dried thyme
2 teaspoons dried rosemary
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
8 German-style sausages
2 cans (15 oz.) Libby's Sliced White Potatoes, drained
1 can (27 oz.) Libby's Jumbo-Can Crispy Sauerkraut
2 Granny Smith apples, peeled and sliced
1/4 cup apple juice
1. Combine thyme, rosemary, salt and pepper in small bowl.
2. In large skillet (that has lid) or dutch oven, heat oil over medium-high. Add sausages and brown on each side 2 minutes.
3. Spread potatoes around sausages then top with seasoning mixture. Next, layer sauerkraut and apples. Pour in apple juice, lower to medium heat and cover. Cook for 15 minutes or until internal temperature of pork is 145°F.
