Cobb Salads with Homemade Honey Mustard Dressing
Recipe by Pretty Real A weeknight meal in less than 30 minutes that includes lean protein and vegetables.
1/3 cup honey
2 tablespoons Dijon mustard
3 tablespoons whole grain mustard
2 tablespoons olive oil
1 teaspoon garlic powder
salt and pepper to taste
1 bag (10 oz.) romaine salad
1/2 cup shredded cheddar cheese
2 vegetable cups (4 oz.) Libby's Diced Carrots, drained
2 vegetable cups (4 oz.) Libby’s Sweet Peas, drained
2 vegetable cups (4oz.) Libby’s Whole Kernel Sweet Corn, drained
12 ounces cooked chicken, cubed
4 ounces diced ham or bacon bits
4 hard-boiled eggs, sliced
12 cherry tomatoes, halved
1. In small bowl, wisk together honey, Dijon mustard, whole grain mustard, oil, garlic powder, salt and pepper. Set aside.
2. Lay out four bowls on your countertop or table. Divide the following ingredients among them: Romaine, cheese, diced carrots, peas, corn, chicken, ham/bacon, eggs, and tomatoes.
3. Wisk dressing again to mix and drizzle over salads.
