1 tablespoon butter
1 medium yellow onion, diced
1/2 cup diced pancetta
1 can (28 oz.) Libby's Jumbo-Can Cut Green Beans, drained
8 small potatoes, peeled and diced
1/4 cup brown sugar
1/8 teaspoon cayenne pepper
1/4 teaspoon salt
1. Preheat oven 350°F.
2. Melt butter in oven-safe skillet over medium. Add onion, cook 2 minutes. Add pancetta, cook 2 minutes. Stir in green beans, potatoes, brown sugar, cayenne, and salt.
3. Bake 10 minutes, or until potatoes are cooked through.
