1 large potato
1 vegetable cup (4 oz.) Libby's Mixed Vegetables, drained
1/2 teaspoon smoked paprika
1/4 teaspoon curry powder
1/4 teaspoon ground ginger
1. Stab potato with fork 3 times and place on microwave-safe dish. Cook 8 minutes. Let cool 3 minutes.
2. Cut potato in half and spoon center into small bowl. Add vegetables, paprika, curry, and ginger. Mix and spoon contents into potato skins. Return to plate.
3. Microwave 30 seconds and serve hot.
