Vegetable Medley Foil Packs

  • 1 can (15 oz.) Libby's Mixed Vegetables, drained

  • 1 can (14.5 oz.) Libby's Sliced Carrots, drained

  • 1 teaspoon garlic powder

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon dried basil

  • 1/2 teaspoon dried thyme

  • 4 tablespoons butter, divided

  • grated parmesan cheese (for topping)


1. In medium bowl, mix together mixed vegetables, carrots, garlic, oregano, basil, and thyme.

2. Divide mixture between four 12×12 inch pieces of foil, placing in center of each piece. Add 1 tablespoon butter on top of each pile and fold foil pack closed, pinching together edges to prevent leaking.

3. Grill over medium-high for 3 minutes on each side. Allow to cool slightly before opening. Sprinkle with cheese when serving.
