Quick & Easy Veggie Burgers

Ingredients
1 can (15.5 oz.) black beans, drained and dried
1 can (15 oz.) Libby's Mixed Vegetables, drained
1 large egg, beaten
1 cup breadcrumbs
1 teaspoon kosher salt
1 teaspoon smoked paprika
1 teaspoon onion powder
1/2 teaspoon black pepper
vegetable oil (for cooking)
4 burger buns
optional suggested toppings (lettuce, sliced tomatoes, sliced onions, pickles, pepper jack cheese, condiments of choice)

Instructions
- In food processor, add black beans and vegetables. Pulse until well chopped.
- Add egg, breadcrumbs, salt, paprika, onion powder and black pepper. Mix until combined, scraping down sides as needed.
- Divide mixture into four equal amounts. Roll with hands to form ball and press to form 1/2 thick patties.
- Add a small amount of oil to a large skillet and heat over medium-high. Gently place patties in skillet. Cook for 5 minutes until golden brown and seared. Flip and cook 5 minutes on other side.
- Once cooked, add to burger buns and top with desired ingredients.
