Each winner will be asked to select one of three charities that will receive a matching monetary and product donation made on behalf of Libby’s, for a total of $3,500 in donations.

  • Meals on Wheels America, the oldest and largest national organization supporting the more than 5,000 community-based senior nutrition programs across the country that are dedicated to addressing senior hunger and isolation. This network exists in virtually every community in America and, along with more than two million volunteers, delivers the nutritious meals, friendly visits and safety checks that enable America’s seniors to live nourished lives with independence and dignity.
  • City Harvest pioneered food rescue in 1982 and, this year, will collect 59 million pounds of excess food to help feed the nearly 1.3 million New Yorkers struggling to put meals on their tables. Through relationships with farms, grocers, restaurants, and manufacturers, City Harvest collects nutritious food that would otherwise go to waste and delivers it free of charge to 500 soup kitchens, food pantries and other community food programs across the five boroughs. In addition, our Healthy Neighborhoods initiative addresses long term food insecurity through community partnerships that work to increase access to affordable and wholesome food. • Children’s Hunger Alliancefounded in 1970 in Columbus, is a statewide nonprofit organization dedicated to ending childhood hunger in Ohio. The organization’s mission is to ensure children without access receive healthy food, nutrition education and physical activity. The organization works with community partners including child care providers, schools, afterschool enrichment programs and summer feeding programs to provide millions of nutritious meals and snacks to Ohio’s 1 in 5 children who struggle with hunger.

Let’s Get Sensible: How to Enjoy a Holiday Classic Reasonably

By Dylan Bailey, MS Candidate

The following 3 words may describe one of the holiday season’s most iconic culinary traditions: Green, Bean, and Casserole. The Green Bean Casserole is a staple in many households for the holidays – and no surprise – the dish was first developed in 1955, meaning this recipe turns 61 this year. Move over mashed potatoes and Brussels sprouts, because we have way too much history with this side dish!

Green Bean Casserole is a welcome addition to any holiday table, and is traditionally served in a large casserole dish, family style. For those trying to enjoy food sensibly this holiday season while also indulging, this “free for all” approach can make it difficult to know what a recommended portion size is, or even stick to it. This can lead to consuming more calories, sodium and fat than you had intended to. In fact, research suggests larger portion sizes might play a role in how much food you’re really eating at meals.

To allow yourself to enjoy this classic comfort food, try changing how the recipe is served before it even hits the table – this way you’ll have more awareness and control of your servings, and won’t be as tempted to go for seconds, or even thirds.

Green Bean Casserole Tartlets

These Green Bean Casserole Tartlets are the perfect solution for keeping portion control in mind. Servings are pre-made and baked into an edible crust! The best part? You’ll still get all the vitamins, minerals and fiber that this dish packs, while keeping portion size under control. Not to mention – these will impress even the pickiest dinner guests.

Individual Herbed Vegetable Pot Pies

If the Green Bean Casserole Tartlets don’t make it to your table this holiday season, these Individual Herbed Vegetable Pot Pies are also packed with pre-portioned goodness, nourishing vegetables, and take just about 10 minutes to make – giving you more time to get back to the table this holiday season!

The Ultimate Holiday Hack: Libby’s® Vegetable Pouches

‘Tis the season of juggling between creating the perfect holiday dinner menu, planning travel to visit relatives, and finding memorable gifts friends and family will love. Getting back to the table with a hot, nutritious meal can be challenging when your days are filled with holiday prep – and we could all use some short cuts to help us navigate through the chaos.

Here at Libby’s®, one of our favorite time-savers is cooking with new Libby’s® Vegetable Pouches. Whether it be weeknight dinners or recipes for your holiday party, the new Pouches are perfect for any nourishing meal. The best part? They’re microwaveable and cook in less than 60 seconds – helping you prepare dinner in a flash! With five different varieties, including Sweet Peas, Cut Green Beans, Sliced Carrots, Whole Kernel Sweet Corn and Mixed Vegetables – there’s plenty room to make a wide array of meals. To help fuel some inspiration and reduce holiday stress, follow these quick and easy recipes made with Libby’s® Vegetable Pouches.

Side Dish Perfection

Rosemary Ricotta Corn

While turkey or ham is often the center of attention for majority of holiday meals, they wouldn’t be complete without the perfect side dish. This Rosemary Ricotta Corn is pure comfort with its creamy texture and delightful taste. Ready in only 7 minutes, this recipe can be used as a companion to the main dish, or as an easy weeknight meal.

Cheesy Peasy

Cheesy Mushroom and Pea Orzo

Looking for a hearty side dish or entrée to get everyone warmed up from the bitter cold this season? Serve up some Cheesy Mushroom and Pea Orzo for dinner, or at an upcoming holiday gathering. Filled with a mixture of cheeses and vegetables, this recipe will bring plenty delight among all.

Change Up Your Salad Game

Green Bean and Blood Orange Salad

If you’re searching for a lighter fare that will also awaken your taste buds – look no further. This Green Bean and Blood Orange Salad will kick up your typical salad recipe a few notches and is made with delicious and unique flavors that will be sure to satisfy hunger. This recipe will save time in the kitchen and requires minimal effort!

Creative Ways to Use Thanksgiving Leftovers

Thanksgiving gives us the chance to spend time with our family, be thankful for all of the good things in our lives, and, of course, eat delicious food. From turkey to stuffing to pies, there is always enough food to last for days! Here are some ways to make Thanksgiving leftovers just as exciting the second time around.

Grilled Turkey Reuben Wraps

Most families have plenty of leftover turkey to go around—it’s a matter of finding creative ways to use it! Use fresh turkey here to make this twist on the classic deli sandwich; it’s so much better than cold cuts. Give the sandwich its trademark kick with Libby’s® Sauerkraut and enjoy!

Leftover Stuffing Veggie Bites

Stuffing always takes center stage as far as side dishes go, but there’s only so much of it you can eat after Thanksgiving has come and gone. These tasty veggie bites combine stuffing, along with half a can of Libby’s® Peas and half a can of Carrots to give the holiday side dish new life—and makes them the perfect complement to any leftover dinner.

Day-After Turkey Soup

Nothing beats a warm, hearty soup on a cold day. This recipe gives you the chance to mix Thanksgiving turkey with some vegetables that didn’t grace the holiday table. To make this recipe even easier to prepare, substitute one can of Libby’s® Cut Green Beans in place of fresh, a can of Sliced Carrots instead of sweet potatoes, and a can of Whole Kernel Sweet Corn instead of frozen.  Feel free to add more or less of each veggie to your liking!

Be the Boss of Your Holiday Buffet

Hosting friends and family is what the holiday season is all about, but entertaining can create some chaos. Grab your holiday party by the reins by serving a holiday buffet that’s easy to prepare and pleases everyone from the foodie to the health nut. Here are a few tips to help you deliver a bountiful buffet and still enjoy the most wonderful time of the year.

Warm Up with Winter Soup

The best friend for a holiday host is a slow cooker. This Butternut Squash Soup with Maple Roasted Garbanzo Beans takes up to six hours to cook, which gives you plenty of time to tend to other party preparations. For even greater ease, serve the soup in the slow cooker so it stays warm while your guests serve themselves!

Brighten Your Buffet

Serve a colorful and healthy salad, like our Carrot and Beet Salad, and skip the worry about keeping your dishes warm during your holiday soiree. Remember to serve the dressing on the side in a decorative carafe so the lettuce stays fresh and crisp.

Treat Guests with Bite Sized Treasures

We all indulge in our favorite holiday desserts, but the abundance of sweets makes it easy to over-do it. Serve extra-small desserts like mini cookies, tarts, and cupcakes, or Carrot Cake Bites, so guests can try multiple items and enjoy the right-sized portions guilt free.

We hope these tips help you be the boss of your buffet this holiday season! Let us know how you prepare for a large crowd during the holidays in the comments.
